The quickest Christmas cookies ever – a’la Raffaello

If you are like me and you don’t want to spend too much time preparing Christmas cookies but you still want to make some, this recipe is for you!

These are small balls that resemble the popular Ferrero pralines.

What do you need?

  • 150 g of white chocolate
  • 50 g of butter
  • 2 spoons of dark rum or similar spirit or rum essence
  • 100 g of desiccated coconut plus some more for coating
  • 2 sachets of vanilla sugar
  • juice from half a lemon
  • almonds (cca 30, this is how many balls you will get from these ingredients)
  • paper cups

How do you make them?

As I said, it is very easy. Grate the white chocolate bar finely. Add the butter, chopped up in small cubes. Then pour in rum or some similar spirit. I used whiskey this time plus a spoonful of rum essence, because we didn’t have any rum at home. Add the vanilla sugar and lemon juice. I like the cookies to be a bit sour, so I usually use more lemon juice than indicated in the recipe. Just taste the mixture and put in gradually as much as you like.

Mix thoroughly with your hand and blend the mixture. Then shape small balls, press one almond into each ball and roll them in the rest of the coconut. Put the balls into prepared paper cups. Ready! It should take around 30 minutes. Easy.

    These look delicious… but I don’t like the taste of rum! Is it a strong taste in the finished cookie, and can it be replaced with something else?


    1. Hi. The strength depends on the amount you use. Use a little or skip it totally if you don’t like it.
